Vegan Stuffed Peppers
Hi guys! So to kick off my first blog post we’re starting with a super fun, healthy, delicious, simple recipe… vegan stuffed peppers! Now you might be wondering how to make stuffed peppers in a dorm setting but it’s honestly so simple. All of your ingredients can be made in a microwave and that’s really all you need!
Ingredients
-vegan ground beef (I use the “Gardein” brand but any vegan beef will suffice)
-chunky garden vegetable pasta sauce (I use Ragu Simply made with 100% olive oil and no added sugar)
-veggies! (Get creative here you can use anything but because I’m using a microwave I chose frozen chopped spinach, frozen broccoli, and frozen chopped kale)
-onion powder, garlic powder, oregano, and red pepper flakes, basil (if this was not in a dorm setting I’d use actual minced garlic and onion as well as fresh basil so you can do that if you wish but the spices just keep it quick and easy)
-brown rice
-bell peppers of course (your choice of color)
-vegan cheese (optional)
Prep
make your rice in the microwave and set aside, heat vegan beef in package and set aside, make veggies and chop up small if needed, combine all ingredients in a large bowl and add sauce and spices. Almost done! For the pepper I just cut it in half and add a little olive oil, salt and pepper and pop in the microwave for a few minutes until it’s warm and a little bit softer but it will still be crunchy.
Finishing Touches
When your peppers are done simply take your pepper filling mixture and fill your pepper halves! Top with vegan mozzarella cheese if you’d like. That’s it! You’re all done.
All Done!
Now you have your peppers and if you make a large batch you can freeze your mixture for future meals or even meal prep for the week! These peppers are low calorie and packed full of nutrients and protein. They’re a great alternative to a typical microwave meal and they’re proof that you can still have nutritious, tasty food made in a microwave! Enjoy!
